The hearth
Three generations of Bianchi cooks have stood at the same hearth on Mulberry Lane. The dough still rises overnight, the ragu still simmers eight hours, and the bread still goes in the oven before the doors open at eleven.
We do this old, on purpose. The technology is there to keep things moving once you sit down, never to replace what happens at the pass.
